Regional Occupational Program ( ROP)

Culinary Arts

 

The Ventura County Department of Education - Regional Occupation Program (ROP) - Culinary Arts program, located on the Ventura High School campus, is designed to help give students an inside look at the field of Culinary Arts by gaining hands-on experience in a mini commercial kitchen setting. The class runs two-hours a day; five days a week.

Culinary Arts II students spend the first part of the course training in the field of hospitality; learning terms, techniques, and perfecting their skills by preparing a variety of foods. The second part of the course they will have the opportunity to intern at a local restaurant where they will work side-by-side with seasoned Chefs. Their internship can be at the business of their choice as long as it is within the field of what was studied in the course. It lasts for approximately nine weeks. At the end of the internship the student receives a certificate for completing the course. Though it does not replace a degreee in the field of study, it does give the student a start in the right direction with entry-level skills.

Juan, pictured at the right of your screen, says, "There are many reasons why you should sign up for the Culinary Arts program at Ventura High School. I's a great place to experience hands-on basic commercial kitchen skills; safety & sanitation, cooking, and knife techniques. In addition, you will be able to participate in field trips to local culinary colleges, farmer's markets, learn first hand from chefs in the area as they share their knowledge, skills, and experience in the hospitality food industry field.

Be on the cutting edge and learn first hand, side-by-side from local seasoned chefs in the area .

You will be able to pull up the TV schedule of the culinary shows that will assist you in making up a lab.

 

Juan Moreno, one of our students, is pictured here working as an intern at the Ventura Beach Marriott Hotel in their commercial kitchen. Since receiving his Certificate of Completion from our program, Juan was hired as a cook for Eric Ericsson's on the Pier and later employed at the Mariott Hotel in Atlanta, Georgia as a cook.
